Mango and Blueberry Overnight Oat Recipe

Overnight oats rank among the most convenient and nutritious breakfast options available! Initially, I wasn't fond of them because of their texture, but I found they are much improved when using yogurt instead of milk. By yogurt, I refer to plant-based yogurt that includes pre- and probiotics. This Mango and Blueberry Overnight Oat Recipe is a great example of being delicious and super healthy.


My overnight oats typically consist of two layers. The lower layer is fruity, combined with Chia seeds and ground flaxseed for added fiber and Omega 3. The top layer features yogurt and oats, with extra raisins for sweetness if desired. Additionally, sprinkle some walnuts on top just before consuming to add a nice crunch.


Both mangoes and blueberries are very healthy and tasty. Don't forget, blueberries are on the dirty dozen's list, which has the highest amount of pesticides, so be sure to use organic ones. Have a look at the full list here.

This Mango and Blueberry Overnight oat is not only delicious, but also extra-super healthy! What more can we ask for?!

Ingredients, serve 1

1/2 Mango or 1 cup of frozen one.

1/3 cups of organic blueberry, (I used frozen one)

1 tbsp chia seed 

1 tbsp ground flaxseed

1/3 of your favorite probiotic fruity yoghurt

1/3 cup of oat


Instructions

Blend mango and blueberry. In a bowl, add chia seed and ground flaxseed and mix well. Rest it for 10 minutes.


In a separate bowl, combine yogurt and oats. Optionally, include a tablespoon of raisins for additional sweetness. Use this mixture as the top layer for your overnight oats.


Let it sit in the fridge overnight and savor it the next morning! It stays fresh when properly covered, so you can enjoy it over the next few days.
