Wholesome Belgian Style Waffle Recipe

Looking for a delightful weekend brunch option? This recipe is perfect for you! These Wholesome Belgian Style Waffles are tasty, high in fiber, and low in sugar. Pair them with your favorite fruits, vegan yoghurt and maple syrup for added sweetness!



Ingredients


2 and 1/2 tsp dry yeast

1 cup soymilk

1 tbsp Sugar

1 cup wholegrain flour

1/4 cup apple puree

1/4 cup mashed banana (around 1 small-medium banana)

1 tsp vanilla essence

60 ml light olive oil

1/4 tsp salt



Heat the soymilk in the microwave for about 30 seconds until it's warm. Mix in the sugar and yeast, stir, and cover with a cloth. Let it sit for 30 minutes until it becomes foamy.


Sift the flour, allowing some whole grain fiber to remain in the sieve, and then add it back in. Combine with the other ingredients and mix thoroughly.


Let it rest for another 10-15 minutes.


Pour the batter into your waffle maker, close the lid, and cook for approximately 6 minutes, or until steam stops escaping. Remove the waffle and repeat with the remaining batter.


Serve it with your favorite vegan yogurt, maple syrup, fruit or jam.
