
Sweetcorn Fritters Recipe

Sweetcorn fritters are a delightful treat that brings back memories of summer picnics and family gatherings. With their crispy exterior and sweet, juicy corn inside, these fritters are not just a snack; they’re an experience!
These days we are having these for weekend brunch. Serve them with some salsa, guacamole or just avocado. Yummy 😋.
Serves 2
Ingredients
1 tbsp of flax seed meal
1/2 cup sweet corn
1/3 cup oat flour
2 teaspoon garlic paste
1 tablespoon flaxseed + 3 tbsp water
2 tablespoon vegan yoghurt
Salt and pepper
Oil to shallow fry.
Vegan yoghurt to serve.
Instructions
Mix the flaxseed with 3 tablespoon of warm water. And leave it set for around 10 minutes to thicken.
In the meantime, defrost sweet corn if you are using frozen one. And mix all the other ingredients.
Once the flaxseed meal is thick, mix it together properly with the rest of the ingredients.
Heat some oil in a frying pan, I'm using the spoon portion out of a large tablespoon of the sweet corn paste and spread it on the the heat oil repeat it until the frying pennies for making sure that there is space between all the fritters.
Cover the frying pan and wait for around 5 minutes make sure that the bottom is Golden brown. Flip fritters over and fry it without cover now until the other side is golden as well.
Serve it with vegan yogurt, if you fancy some parsley and apple juice goes really well with it.
