Apple and Banana Pancake Recipe

This apple and banana pancake recipe is not only nutritious and light but also a delightful treat that pleases everyone. This recipe is packed with wholesome ingredients like almond meal, they make for a perfect breakfast or snack!
The recipe proportion serves two people, but if needing more just multiply everything.

Ingredients
Serves 2
Pancake batter:
1 ripe banana peeled
1 Granny Smith apple cored
1/2 cup of oat flour
1/2 a cup of soy milk
1/2 a cup of ground almond or almond meal
2 tbsp of chia seeds
2 teaspoons of cinnamon
One pinch of salt
To fry
Vegan butter, coconut oil, or other light oil
To serve
Your favorite vegan yoghurt
Fruits like more banana sliced apple mango or what's in season.
Optional: maple syrup
Instructions
Dice the banana and Granny Smith apple roughly. Blend them in a food processor until the mixture appears smooth and creamy.
Incorporate the remaining batter ingredients and blend further. Allow it to sit for 5 to 10 minutes until the batter slightly thickens.
Preheat the frying pan on medium heat and pour in a tablespoon of your oil. Then, add a heaped tablespoon or a small ladle of pancake batter to the pan, forming it into a circle. Continue this process until you have 4 pancakes of approximately the same size.
Fry these for 2-3 minutes until the bottom has cooked, then flip the pancakes over and cook the other side for another 2 minutes.
As you wait, get the fruits ready to serve with the pancakes.
Once cooked, remove the pancakes and top with your yoghurt and the fruits you prepared.
