Tropical Overnight Oat

Enjoy a tropical getaway with this tasty and healthy Tropical Overnight Oat recipe. It's ideal for a quick, nutritious breakfast that you can make the night before and simply grab from the fridge in the morning, or prepare in a sealed Tupperware to take to work.


Overnight oats are one of the most convenient and healthiest breakfasts of them all! I didn't like those before because of their texture, but I found it's much better if we use yogurt instead of milk. By yogurt, I mean plant-based yogurt with pre- and probiotics. 


It typically consists of two layers. The bottom layer is fruity, with added chia seeds and ground flaxseed for extra fiber and Omega 3. The nutritional benefits are truly impressive, especially when using one of my favorite fruits, mango. Check out some of the benefits of mangoes below. My preferred yogurt is SoyPRO+ because it includes prebiotics, which keeps my stomach content, and it has a neutral flavor. However, feel free to use your favorite! Just to be clear, I am NOT sponsored by them!

On the top layer, add yogurt and oats, with extra raisins for sweetness if needed. Additionally, sprinkle some walnuts on top right before enjoying it!






So, let's get to it!


Ingredients

1/2 Mango

1/3 cups pineapple

3 tbsp chia seed 

3 tbsp ground flaxseed 

2/3 cup of coconut water

1 of your favorite fruity yoghurt

1 cup of oat



Instructions

Combine mango, pineapple, and coconut water in a blender. In a bowl, mix chia seeds and ground flaxseed with the tropical blend and stir thoroughly. Portion this mixture into 3 bowls. Let it sit for 10 minutes.


In a separate bowl, combine yogurt and oats. Optionally, you can add a tablespoon of raisins for additional sweetness. Distribute this mixture evenly among the three cups containing the tropical mixture.


Let it rest overnight and savor it the next morning.
