Fridge Clean Out Stir Fry Recipe

There are moments when we urgently need to use the food stored in our fridge. I experienced one of these moments while traveling and wanted to avoid discarding any perishable items. So, let's take a look at what I had in the fridge for this Fridge Clean Out Stir Fry Recipe.
I had a leftover whole potato which was already cooked (microwaved)
1/4 purple cabbage, 1 apple, spring onion, a few carrots, tomatoes, and capsicum. lemons, spinach
I considered using the tomatoes and capsicum for a sandwich, as carrots stay fresh longer, so I'll leave them in the fridge. Let's prepare a stir-fry with the remaining ingredients, adding a few items from the non-perishable section.
These are what I used, but the options are limitless. Incorporate leftover rice or noodles. Use fresh potatoes, but slice them thinly.
Questions to consider:
What about adding capsicum, green peas, or other salad ingredients? You can include almost anything that cooks well and isn't exclusively used fresh.
What sauces do you have? I used horseradish because it complements everything in my stir-fry, but what do you have in your fridge?
By the way, I also had some garlic paste, but I was considerate of my husband and fellow travelers, so I chose not to use any, lol. It keeps well anyway.
Do you have any additional vegetables or fruits? A little bit of fruit can add sweetness and enhance salty flavors.
Feel free to sprinkle some fresh herbs as well!
The result looks like a big mess, but its delicious, healthy and soooo sustainable. We really should call it Marchi's Mess.
Ingredients
2 tbsp Olive oil
1/4 purple cabbage, chopped
1 Apple, cored and thinly sliced
handful of spinach washed
1 tbsp pumpkin seed
1 tbsp horseradish
2-3 Spring onion, sliced
Optional Chilli
lemon
salt and pepper
Warm 2 tablespoons of olive oil. Add the ingredients and fry for 5 minutes. Cover and continue frying for another 10 minutes. Serve with spring onion, chili, and a squeeze of lemon juice.
