Avocado and Capsicum Spread Recipe

Bored of the old avocado toast? Try this version of Avocado and Capsicum Spread Recipe is here to spice it up! For your base use your favorite bread gluten-free bread, toast, bagel or even, buckwheat crackers, anything you prefer.... and enjoy!
Here are some notes regarding the ingredients. Avocado is part of the clean fifteen list, so there's no need to worry about pesticide levels. On the other hand, capsicum/bell pepper is included in the dirty dozen, which is concerning. Check out the full list here. For limes or lemons, I typically opt for organic if I'm using the peel. Otherwise, regular ones are fine. Tomatoes fall somewhere in between these categories, so it's your choice. However, if possible, try to minimize pesticide exposure by choosing organic options.

Ingredients
1 large avocado, skin and seed removed
1 handful of organic coriander, chopped
1/2 fresh organic red capsicum diced
1 organic lime, peel grated, then squeezed
1/2 tsp salt and pepper to taste
1 tbsp pumpkin seeds
Handful of organic cherry tomatoes, halved
Instructions
Prepare all the ingredients as instructed. Mesh avocado with a fork then mix in diced capsicum, chopped coriander, grated lime peel, lime juice salt and pepper.
Spread avocado mix on your toast or preferred base. Adjust salt and pepper, sprinkle pumpkin seed and serve with halved cherry tomatoes.
