This Tomato Orzo and Spinach Bake Recipe is an extremely convenient pasta dish. Perfect for busy weeknight dinners or when you're short on time. Not only is it convenient, but it's also delicious and healthy. What more could you ask for?
Orzo is a type of pasta which when cooking, absorbs all the liquid and you don't need extra cooking liquid. If you can't find orzo, try Rizoni or other small rice-shaped pasta. There should be gluten varieties as well, if you prefer that.

Ingredients
200 grams of orzo
400 ml vegetable stock
250 g cherry tomato red onion
100 g Frozen spinach
1 purple onion
2 tbsp of olive oil
Handful of fresh basil
Vegan feta cheese, to your liking
Instruction
Preheat the oven 180 ℃.
Prepare the stock and mix it with orzo.
Add tomato, spinach portions and sliced onion. Bake for 35-40 minutes.
Check if the pasta is cooked last 10 mins.
Remove from oven. Add olive oil, chopped basil and serve with cubed vegan feta.
