And remember frozen spinach is just as beneficial as fresh as it is harvested at its peak nutritional value and frozen to maintain this content!



Spinach and Feta Toasty Recipe

Serves 2


Ingredients


150 g frozen Organic Spinach

50 g Vegan Feta

1 small handful of dill chopped, (around 2 tbsp of chopped dill)

1/3 cup of grated vegan Cheese

8 Sun-dried tomatoes, sliced

1/4 cup kalamata olives, sliced

4 large slices of bread

1 tbsp olive oil


Instructions


Defrost the spinach in the microwave and use a sieve to press out the liquid. Use a fork to mash the vegan feta, then combine it with spinach and chopped dill.


Spread half of this mixtures on one slice of bread. Add half of the sundried tomatoes, olives and grated cheese. Place another slice of bread on top and place it in a sandwich press. Brush both slices of bread on the outside with olive oil to make it nice and crunchy!


Alternatively, use a baking tray and bake sandwiches in the oven for around 10-15 minutes.


Repeat these steps for the other toasty as well! Enjoy!
