Sour Chipotle Stew Recipe

To be honest, this Sour Chipotle Stew Recipe is among my favorite creations. We absolutely love it! It's incredibly flavorful with contrasting and complimentary flavors, and very simple to prepare.

The vegetable store can be made fresh or from vegetable bouillon, stock concentrate. Check labels, so there's no unwanted ingredients.
How spicy do you prefer?
I like it medium, so used 2 tsp of chipotle powder, but adjust to your taste.
Use 1 tsp for milder and 3 or more of you would like to spice it up even more!
Ingredients
2 tbsp of olive oil
2 teaspoons of garlic
2 teaspoons of chipotle powder
1/4 cup of tomato paste
1 l vegetable stock
1/4 cup apple puree
400 grams of potato peeled and diced
200 grams of carrot peeled and sliced
1 cup Sauerkraut
200 g sour cream
Warm oil with garlic paste and tomato paste. Heat for a few minutes, then stir in the tomato paste and add vegetable stock, potatoes, apple puree, and carrots. Cook for approximately 10 minutes, then add sauerkraut and continue cooking for another 5 to 10 minutes until everything is thoroughly cooked.
Serve as is or with Semolina dumplings, bread or gluten free soup noodles, as you prefer.
