
Jacket Potato with Black Eyed Peas in cChipotle Tomato Sauce Recipe

Not sure what to eat, but fancy something cosy and comforting? Take it from a self-confessed potato addict, this Black eyed peas chipotle jacket potato is what you need.
I usuall have my shelves stocked up with some staples, like cans of chopped tomatoes, beans, and also other products like potatoes that keep well. Be sure to have a variety of beans, so you can make this without shopping, at last minutes notice or simply if you fancy some comfort food.
Don't forget to stock up on BPA free cans and if possible organic, which is usually tastier.

Ingredients
Four large potatoes
2 tbsp of olive oil
One onion chopped
One teaspoon (roasted) garlic puree
One can of chopped tomatoes
One can of Black Eyed Peas or cowpeas
1 tsp of chipotle powder
Salt and pepper to taste
Srrve with vegan sour cream, beetroot leaves and pickles.
Wrap potatoes individually into silver foil. Then bake it in the oven for about 1 hour at 200 degrees.
In the meantime, heat olive oil, then saute chopped onion and garlic paste covered.
Add chopped tomatoes and Black Eyed Peas with chipotle and salt and pepper.
Cook covered in medium low heat for about 20 minutes.
Cut open the potatoes, gently mash the inside with a fork, sprinkle salt and ladle the #blackeyedpeas stew into it!
