East Asian Sweet Potato Pasta Recipe

This recipe is called East Asian Sweet Potato Pasta because Adzuki beans have been grown in East Asia for millennia. In Japan, for example, they are the second most significant legume after soybeans.
Adzuki beans have a sweet and nutty flavor, making them suitable for both sweet and savory dishes. Interestingly, they are frequently used in desserts, such as red bean paste for cakes and soups.
Like most beans, adzuki beans are loaded with fiber, protein, complex carbs, antioxidants and other beneficial plant compounds. Source

Ingredient
Serves 4
1 box of spiral pasta serves 4. I used quinoa GF pasta from Ceres Organics
2 tbsp olive oil
1 onion chopped
1 tsp garlic paste
1 can of chopped tomatoes
1-2 tsp chipotle powder (how spicy do you like it?)
1 tsp salt
1 medium sweet potato
1 tbsp vegan dark chocolate chips
3 tbsp soymilk
1 can adzuki bean, rinsed
2 tsp sherry vinegar
Instructions
Cook pasta according to packet instructions.
Warm the oil and sauté the chopped onion and garlic paste on medium-low heat, covered, for approximately 8 minutes. Pierce the sweet potato all over with a fork and microwave it for 7 minutes. Once it's cool enough to handle, peel and cut it into cubes.
Add chopped tomatoes, chipotle, salt sweet potatoes, and soymilk to onion base. Cook for 15 minutes, ensuring the sweet potato is soft. Mash with handheld blender.
Incorporate dark chocolate and adzuki beans, cooking for 10 minutes. Pour in sherry vinegar, allow it to return to a boil, then remove from heat.
Toss with cooked pasta and accompany with your preferred vegan cheese or sour cream.
