Papaya Salad Recipe is great, not only is it extra super healthy, but so delicious and refreshing. It has avocado with its creamy goodness, sweet cherry tomatoes, delicious dressing and lovely rocket balancing out the sweetness. Serve it with some crunchy topping, like I added marinated and fried tofu.



Did you know that papaya is a tropical fruit rich in vitamins C and A, along with fiber and beneficial plant compounds? Papaya possesses strong antioxidant properties that may help decrease oxidative stress and reduce the risk of various diseases may improve heart health and might have anti-inflammatory properties as well.


So, all in all, papaya is abundant in essential nutrients and has a delightful flavor.

Ingredients


Dressing

4 tablespoons of olive oil,

1 1/2 tablespoon of apple cider vinegar 1 teaspoon of maple syrup

1 small or 1/2 large onion finely sliced

Salad

100 g of organic rocket

200 grams of organic cherry tomato halved

1/2 papaya seeded and diced

2 avocados peeled, seeded and cubed

2 tbsp of pine nuts


Serve it with Marinated Tofu Recipe here



Instructions


Mix all the salad dressing ingredients together and cover it in a jar. Shake it vigorously, until it's mixed well together.


Prepare all the salad ingredients and mix it well.



Pour dressing over salad and serve the papaya salad with tofu or your favorite main ingredient.
