Green Peas Bubble and Squeak Recipe

My husband always loved a hearty English breakfast, complete with tasty sausage, baked beans, and the like. Truth be told, even back when I ate meat, I couldn't tolerate sausages, bacon, or any type of red meat. However, as someone who absolutely adores potatoes, I could never resist a delicious hash brown or bubble and squeak.
Here's to this green pea bubble and squeak recipe, which perfectly satisfies my craving for a lazy weekend comfort food brunch.
I enjoy it with some baked beans, which can be homemade from scratch or simply from a can, along with perhaps your preferred vegan sausage. I'm quite particular about my vegan sausage since I never liked the regular kind, and I only have it occasionally.
My go-to choice is the chorizo-flavored veef. I'm sure you can understand why I make an exception for this processed sausage rather than making it a regular habit.

Ingredients
700 g potato
1 tsp Garlic paste
1 can Butter bean, drained
1/2 cup Green peas, defrosted if frozen
1-2 tbsp Vegan butter
1.5 tbsp flour, use 2 tbsp oat flour for gf option
Oil to fry
Salt and pepper
Instructions
Clean the potatoes and pierce them with a fork. Microwave for 8 minutes.
Drain and mash the butterbeans. After the potatoes have cooled, peel and roughly mash them. Combine all the ingredients together.
Warm oil in a pan. Scoop a large spoonful of the mixture and press it flat in the frying pan. Cook for 5 minutes until it becomes crispy and golden, then flip it over. Continue frying until it reaches the same color.
Pair it with sausage, baked beans, or your preferred brunch ingredients.
