Green Bean Casserole for Vegan Thanksgiving

I have always enjoyed learning about various cultures and traditions. Since my husband has American heritage and we have family in the United States, I have been particularly drawn to exploring their customs. Thanksgiving is undoubtedly one of their most renowned traditions, and I believe many Americans still observe it. It's a wonderful opportunity to gather with family and enjoy a feast together.

In my Thanksgiving series, I have explored and created vegan versions of some very traditional dishes. You can serve these to your family if you're seeking vegan alternatives, or simply try them to experience different traditions if you're not from the U.S. After all, new flavors only broaden our palate.

this green bean casserole is simple to make it would usually consist of mushroom soup and obviously green beans and some fried either shallot or onion he was stopped the mushroom soup you would buy as a can but in a can it would consist of milk or cream so I have made my own but very luckily the fried onions or shallots are still vegan and it gives a nice crunchiness to the top of the casserole so let's get started.

Ingredients

3 table spoons of olive oil

1 onion peeled and chopped

2 garlic cloves peeled and diced

200 grammes of butter mushrooms peeled and sliced

1 1/2 tablespoon of flour (use 2 tbsp of oat flour for gf option)

some water to desired consistency (around 1/3 cup)

300 mL of vegan cream

1 stock cube or your favorite vegetable stock replacement

500 grammes of frozen vegan green beans has

1/4 cups of fried onion or shallots bought from the shop

Instructions

Heat oil and sauté the onion and garlic. Add 200 grams of sliced mushrooms and cook until the mushrooms are thoroughly cooked and turn a dark brown, about 7 minutes. Sprinkle flour over the mixture, add a couple of tablespoons of water, and mix until smooth. Add a bit more water and mix again until the mixture is smooth. Add the parsley and cream, and cook for another 10 minutes.

Once the mushroom cream is ready, spread the frozen green beans in the casserole dish. Pour the cream over the beans and mix well. Sprinkle fried onions or shallots evenly on top, then bake for approximately 20 to 30 minutes until the green beans are fully cooked.

Enjoy it while it's warm!
