Lentil and Black Bean Loaf for Vegan Thanksgiving
As you may be aware, I have always found joy in learning about different cultures and traditions. Given that my husband has American roots and we have relatives in the United States, I have been especially interested in exploring their customs. Thanksgiving is certainly one of their most famous traditions, and I think many Americans continue to celebrate it. It's a fantastic chance to come together with family and enjoy a meal.
Throughout my Thanksgiving series, I've developed vegan versions of several classic dishes. These can be served to your family if you're looking for vegan options, or you can try them to explore different traditions if you're not from the U.S. Ultimately, new flavors expand our palate.
And let's be honest, Thanksgiving wouldn't be complete without a meatless loaf, right? I've been experimenting with various recipes using different beans or pulses, so let's try this version for the upcoming Thanksgiving.
Ingredients
1/2 cup of lentils soaked overnight
2 bay leaves
1 can of black beans rinsed
3 tablespoons of olive oil
1 onion chopped
2 teaspoons of garlic based
2 carrots peeled and cleaned, diced
2 celery sticks cleaned and diced
300 grammes of silken tofu
1/2 cup of oatmeal
1/2 cup of rolled oat
1/2 cup of almond meal
1 tablespoon of apple cider vinegar
one tablespoon of English mustard
2 teaspoons of salt
1 tablespoon of liquid smoke
1 teaspoon dried coriander
1/2 teaspoon sugar
3 tablespoons of tomato paste
Coating
1/3 cup of ketchup
2 teaspoons of mustard
1 tablesoob of sugar
1 tablespoon of apple cider vinegar
Instructions
Simmer the lentils with bay leaves and salt for about 15 minutes until they are tender. Sauté the chopped onion, garlic paste, carrots, and celery in olive oil for approximately 7 to 10 minutes until they become soft.
In a separate bowl, combine all the coating ingredients. Place all ingredients except the oat flakes into a blender. Pulse a few times until they are well mixed but still have a slightly grainy texture. Then, add the oat flakes and mix thoroughly.
Transfer this mixture onto a baking tray and shape it into a loaf using your hands. Smooth the top and sides by patting them down gently. Use a brush to cover the loaf with half of the coating.
Bake loaf for 30 minutes. Cover with the other half of the coating and bake it for another 20 minutes. Check if it’s cooked throughout and bake it for another 10 minutes if necessary.
