This simple, Easiest Roast Potato Recipe saves time and retains more nutrients compared to traditional roast potatoes. I highly recommend these roast potatoes for any family gatherings, such as Thanksgiving, Christmas or just any supper. I promise, everybody will love it!
I precooked the potatoes using a microwave. Although it may be considered an unconventional approach, microwaving is a technique that saves time and energy while preserving more nutrients than traditional cooking methods. This effect varies with different ingredients, but it is effective for potatoes, mushrooms, and garlic, to name a few. Learn more about it here.

Ingredients
1 kilogram of potato thoroughly washed
2 tbsp olive oil
salt and pepper to taste
Instructions
Get the potatoes ready by removing any sprouts, washing them thoroughly, and piercing them all over with a fork. Microwave them based on their size: small potatoes should be microwaved for about six to seven minutes, medium potatoes for seven to eight minutes, and larger potatoes for nine to ten minutes.
Keep the skin on and cut the potatoes into large cubes. Arrange them on a large baking tray, and sprinkle salt and pepper evenly. Brush the potatoes with olive oil, then place the tray in a preheated oven and bake for about 15 to 20 minutes until they are crisp. Halfway through, shake the tray and turn the potatoes to ensure all sides become crispy. Check if the potatoes are thoroughly baked; if necessary, return them to the oven for an additional 5 to 10 minutes.
