Eggplant loaf recipe is a great meatless alternative, making it suitable for vegans, vegetarians or those looking to reduce meat. Eggplant is low in calories, high in fiber, and contains antioxidants that support overall health.
I love eggplants as they are very versatile, it can be flavored in many ways and pairs well with a variety of sides, making it a flexible dish for different tastes. In this dish I used sweet paprika but would be equally great with chipotle.

Ingredients
1/2 cup black or red or brown rice, rinsed
3 tbsp olive oil
2 garlic cloves, cleaned and sliced
1 onion, chopped
1 eggplant, diced
2 tbsp paprika powder
1/4 cup tomato or capsicum paste
2 tbsp Flaxseed meal
1/4 cups oatmeal flakes
3 tbsp rolled oat

Instructions
Cover and cook rice with 1 cup of water.
Warm the oil and add onion, garlic, diced eggplant, tomato or capsicum paste, paprika powder, salt, and pepper. Sauté and cook uncovered until everything is thoroughly cooked, which should take about 15 minutes.
Blend saluted eggplant roughly. Add rice and remaining ingredients, except flaxseed. Mix thoroughly. Form a loaf of this on a baking tray, cover with flaxseed and tap it throughout. Bake for around 30-45 minutes, until firm.
Serve with side dish, like mash potato and some nice side salad.
