Half-and-half Mashed potato and cauliflower Recipe

Being a potato aficionado, I enjoy potatoes in every form. This Mashed Potato and Cauliflower dish combines both, offering a lighter option and featuring my second favorite vegetable: cauliflower. This Half-and-half Mashed potato and cauliflower Recipe simple to prepare and a great choice for a lighter meal.


Everyone has their own preference for mashed potatoes. Some enjoy them smooth, while others prefer them chunky. Mash them to the consistency you desire. Personally, I like mine crunchy with large chunks. However, you can make them as smooth as you like.


This recipe involves microwaving, but don't let that deter you. It's not only the simplest method, but it also helps potatoes and cauliflower retain most of their nutrients. 


Note: The combined weight of the potato and cauliflower should be approximately 1 kilogram. Feel free to adjust the proportions as you prefer.

Serves 4 as side


500g potato (see note)

500g cauliflower, around half head

150 ml Soymilk or your favorite plant based 

Half-and-half Mashed potato and cauliflower
Half-and-half Mashed potato and cauliflower

Salt and pepper to taste

2 tbsp butterish or margarine 


Instructions


Wash the potato and check for any sprouts, removing them if found. Use a fork to poke holes all over the potato. Microwave it for 7 minutes.


Rinse the cauliflower and cut it into florets. After the microwave finishes with the potato, add the cauliflower to the same plate and microwave them together for an additional 2 minutes. Ensure both are nearly fully cooked. Peel and dice the potatoes.


Add the potato and cauliflower to the pan along with the other ingredients. Bring to a boil and cook for 2 minutes, making sure everything is thoroughly cooked.


Use a potato masher or blender to mash and mix everything together.  


Serve it as a side dish and enjoy!
