Easy-Cow-Peasy Pasta Recipe

Are you in a rush and looking for something quick and easy to make? Look no further this Easy-Cow-Peasy Pasta Recipe is for you! This is one of my go-to recipes when in a rush and don't even have time to shop. Pretty much all these ingredients can be stored on the shelf or the fridge for the rainy days.


You might wonder, what about the fresh parsley? Parsley is one of those ingredients you can freeze and simply cut from the bunch as needed, defrosting effortlessly. My husband claimed it couldn't be done! But guess what, I managed to fool him by serving the frozen parsley, and he didn't even notice. I definitely got to say, "I told you so!"


I used gluten free penne pasta from Ceres, see here, but use other gluten free brands like San Remo or other wholegrain varieties.


Ingredients, Serve 4


Penne or spiral pasta for 4 (About)


2 tbsp olive oil

2 tsp garlic paste

1-2 tsp chipotle

2 tbsp madras curry

1 can Cowpea, drained and rinsed

1 can chickpea, drained and rinsed. (Might want to save aquafaba for some dessert)

3/4 cup vegan sour cream

1/2 cup of soymilk

1 handful of parsley, chopped

#vegan sour cream to serve and chopped hazelnut


Instructions

Boil water, add salt and cook pasta according to packet instructions.


In the meantime, heat oil with garlic paste and chipotle. Once warm add madras curry and stir well. Add both cans of peas, soymilk and sour cream. Season with salt and pepper. Stir and cook for 10 minutes.


Drain pasta.


Take out half of the sauce and blend it well. Stir with other half and mix it with pasta.  (Alternatively, just blend roughly the whole sauce with a handheld blender but be careful not to over blend). Mix with chopped parsley and add chopped hazelnuts.


Serve with even more sour cream!
