Easy Caribbean Apple Cake Recipe

The title Easy Caribbean Apple Cake Recipe perfectly describes this cake. This recipe includes a generous amount of rum, a spirit that comes from Caribbean nations such as Barbados. Additionally, it's incredibly simple to make and bake using Granny Smith apples. It's bursting with flavor!
I have created two versions: one using gluten-free flour and the other with wholegrain flour. The recipe works with both types, so choose the version you prefer.
I used gluten-free self-raisin flour, but this cake should also work with plain flour. Just add one teaspoon of baking powder and 1/4 teaspoon of baking soda (or check the specific flour's packaging). It's up to you; use what you have at home.

Ingredients
2 tbsp of ground flax seed
125 g of vegan butter or margarine
1/3 of heaped cup of brown sugar
100 ml of plain soy milk
60 ml of rum
2 teaspoons of vanilla essence
1 cup of (gluten-free) self-raisin flour, or see other options above
1 1/4 teaspoon of sea salt
1/2 cup almond meal
1 large apple around 200 grams, peeled cord and diced (Granny Smith)
1/2 cup of walnut, chopped to large pieces
Icing sugar to serve
Instructions
Preheat the oven to 170 Celsius degree conventional. Line a cake tin with baking paper.
Combine the ground flax seed with around 100 milliliters of boiling water and stir until there are no lumps. Set aside to thicken.
Microwave the vegan butter or margarine, for 30 seconds. Mix in sugar, stir. Microwave it for 10 seconds and stir until it blended. Pour in soymilk, rum, vanilla bean paste and ground flax seed paste. Mix to combine well.
Sift flour into another large bowl, this is to ensure there are no lumps. Some fiber will stay on the sieve, pour this in with the sifted flour. Add almond meal. Then pour in all the wet ingredients and stir until a smooth.
Add apple and walnuts, mix it well so the apple and the walnuts are well distributed.
Then bake in the oven for around 40 minutes until golden brown and the top springs back when lightly pressed.
Allowed to cake to cool in the tin for at least 50 minutes then turn out onto a serving plate dust with icing sugar and serve. (maybe with some ice cream?)
