Simple Kale Salad Recipe

Kale often has a bitter flavor that I don't particularly enjoy. In this Simple Kale Salad Recipe, I demonstrate how to tenderize and soften kale, which helps to reduce that bitterness.
You may know that I enjoy experimenting with different gadgets, so I've been using this kale trimmer for kale salads. It's quite enjoyable. However, if you prefer a minimalist approach, it's also very straightforward and easy.
Kale is considered a superfood because of its high fiber and iron content. However, its nutritional value may decrease if you don't buy organic, as non-organic kale often contains a significant amount of pesticides. Remember, kale is on the dirty dozen list, indicating it has a high level of pesticide residues. More info here.
Ingredients, serves 2
1 small bunch of organic kale, trimmed and washed
1 tbsp olive oil
Drizzle olive oil over the kale leaves. Massage them for 3-5 minutes, tearing them occasionally, until they are bite-sized and tender. Add the toppings. See below
Salad topping:
For my salad I used:
1 avocado, peeled, seeded and roughly diced
1 handful of cherry tomatoes, washed and halved
Juice of 1 lemon
salt and pepper to taste
Assemble the massaged kale with the salad toppings.
Don't hesitate to include your favorite ingredients, such as purple onion, vegan feta, cucumber, or others; it will be equally delicious!
