As always, opt for organic spinach, which can also be found in frozen form. Spinach is part of the dirty dozen list, indicating it contains a high level of pesticides. Since one of the main reasons for consuming spinach is its nutritional benefits, it's important to avoid causing more harm than good with pesticides. Although you might worry about the cost of organic spinach, purchasing it frozen can make it more budget-friendly.
Furthermore, frozen spinach also offers greater nutritional benefits. Typically, frozen fruits and vegetables are picked and frozen at their peak nutritional value, preserving their nutrients. On the other hand, fresh fruits and vegetables take days to reach stores and tables from the farm. Therefore, choosing frozen organic spinach is a great option!
I typically have trouble finding frozen parsley. How about you? However, when I purchase a large organic bunch, I freeze the leftovers myself. I assure you, you won't notice the difference, particularly if it's going to be cooked or baked. I learned this trick from my stepmom!
Ingredients
1/4 cup of olive oil
2 leeks, cleaned and sliced
1 tablespoon of garlic paste
around 500 grams of potato peeled, thinly sliced
500 g of Frozen organic spinach
1 tbsp of salt,
2 celery sticks, sliced
300 grams of silken tofu
1 bunch of organic parsley
3 sheets of short crust pastry

Instructions
What sort of baking tin do you use? If it's not Non-stick cover with baking paper.
Preheat oven to 200 degrees, lay 1 sheet of pastry at the bottom of the baking pan, and cut around the edges. Cut the second pastry into 3 equal width straps. Press this on the inner side of the baking tin and press down to merge it with the bottom of the baking tin to create the bottom and the side of the pie. Place baking paper on, then baking beans and bake it in the oven for around 15 minutes until golden.
In the meantime, prepare the filling. Heat the olive oil and add the leak and the garlic paste. Sauté for a couple of minutes, then add to potato spinach and the celery sticks. Stir it frequently, then cover with a lid and cook for 10 minutes, ensuring everything is cooked.
Whisk the silken tofu. Once filling is ready, blend it roughly with a handheld. Then add silken tofu and stir well to combine.
Add filling to the prepared pie crust. Cover the top with the third sheet. Press to merge the sheets with a fork at the side and cut around the side to form a circle. With a fork spike the top pastry, so steam can escape.
Bake it for 35 minutes until golden.
Let it rest for 30 minutes. Then serve it with some crunchy salad or coleslaw. Enjoy!
