Butterbean and Sweetcorn Jacket Potatoes

A convenient and comforting British favorite is tuna sweetcorn mayonnaise, which can be used as a filling for sandwiches, wraps, or jacket potatoes. It's incredibly easy to prepare and packed with flavor, making it a go-to option when you're short on time or craving comfort food. My goal was to create a similar dish, but in a vegan version.
If you're reading my blog, I can assume that you're either trying to reduce your meat intake, you're vegan, or you're simply seeking new food options. Consequently, my take on this simple, comforting dish, instead of tuna sweetcorn mayonnaise, is Butterbean and Sweetcorn Jacket Potatoes.
Similar to the fish version, this one is incredibly simple to make and packed with flavor. You can also use this filling for jacket potatoes, wraps, or sandwiches.

Alright, let's get started with this dish, which requires minimal preparation. If you have these staple ingredients in your fridge or pantry, there's no reason not to proceed.
Ingredients
2 large potatoes, cleaned and scrubbed
1 can Butterbean, drained and rinsed
1 small can Sweetcorn, rinsed
2 tbsp vegan mayo
1/2 tbsp Vegan horseradish
Salt and pepper
Optional vegan butter, margarine, or olive oil
Instructions
Pierce the potatoes all over with a fork. Microwave them for 10 minutes. If they're still not soft, add a few more minutes.
Meanwhile, coarsely mash the butter beans. Add mayonnaise, horseradish, and sweetcorn. Mix thoroughly, then taste and adjust the seasoning with more mayonnaise or horseradish if necessary.
Slice the potato in half and then make a cross-cut. Sprinkle with salt and gently mash the interior with a fork. Optional: Add olive oil, vegan butter, or margarine.
Spoon half of the butter bean mixture on top and serve immediately.
Tip: Use this for wrap and sandwiches.
