Both Quinoa and split peas are also rich in dietary fiber, which aids digestion and helps maintain a healthy gut. In addition, Quinoa is packed with vitamins and minerals, including magnesium, B vitamins, iron, potassium, calcium, and antioxidants.


**Gluten-Free**: Naturally gluten-free, quinoa is an excellent option for those with gluten intolerance or celiac disease.


In addition to Quinoa, Split peas are also a great source of protein, making them an excellent choice for our plant-based diets.


Split peas contain important vitamins and minerals such as vitamin A, folate, and iron, and are low in fat.


Being high in fiber and protein, both quinoa and split peas can help promote a feeling of fullness, aiding in weight management.


Preparation the night before:


Soak quinoa and split peas separately the night before.


Ingredients for falafel


1 1/2 cups of red split peas one tablespoon ground cumin

1 tbsp ground coriander

1/2 a tsp juniper berry

1 small onion chopped coarsely

1 cup loosely packed fresh mint leaves

1 cup loosely packed fresh coriander leaves

2-3 tablespoons of chickpea flour

Oil to shallow fry


Ingredients for tabouli


1 cup of dried quinoa, soaked overnight

1 medium red onion, chopped finely

1 large organic or two small red capsicum, Diced

4 cups of loosely packed fresh flat leaf parsley leaves finely chopped

4 cups of loosely packed fresh mint leaves chopped finely

1/4 cup apple cider vinegar

2 tbsp of olive oil

Salt and pepper to taste


Your favourite wraps


Vegan yoghurt to serve


Instructions


Drain and rinse the quinoa and then cook it with plenty of water for around 20 minutes with generous salt. Drain ready


Prepare all the tabouli ingredients and mix together.


Drain and ring the split peas. Then, add all the falafel ingredients into a blender.

Blend all the ingredients together. Heat the oil up in a large frying pan and shallow fry falafel in batches, turning over.


Serve falafel and tabbouleh immediately with yoghurt and some chilli.


Place a couple of spoons of tabouli on the wrap. Top it with, 2 falafels, yoghurt . Turn edges in and roll it up from the bottom. Serve it with pickled chillies.
