
Deconstructed Strawberry Banoffee Pie

My husband has been "urging" me to make banoffee pie for him. Since I've never made it before, I was eager to add my own twist and make it a bit fruitier. So, I have come up with this delicious Deconstructed Strawberry banoffee pie.
Tips
Buy some good quality caramel, so we don't have to feel that guilty about all the goodness in it.
Frozen Strawberry works too, just allow time to defrost

Serves 4
Ingredients
100 g vegan caramel (I used coconut caramel)
4 Banana, peeled and sliced
1 tab Whipped cream (I used soy)
20 g Dark chocolate grated thinly
4 tbsp Roasted hazelnut, chopped
200 g organic strawberry (halved or sliced)
Crumble
60 g biscuits (original recipe calls for digestive, I used vegan gf ANZAC)
40 g vegan butter
Cut the butter into large pieces and microwave for 30 seconds, stir, and microwave again if it's not fully melted.
Crush or blend the biscuits into small pieces. In a bowl, combine the butter and biscuits to create the base. Take this base mixture and spread it evenly in a flat plate and press it down firmly. Refrigerate it for a couple of hours to set and solidify. Once set, you can peel it off and crumble roughly
Assembling the pies
The above portion serves 4 so, all the ingredients need to be divided by 4.
Furthermore, each pie will consist of two layers of crumbs, caramel, and banana, with each layer containing 1/8 of these ingredients. Essentially, you should first divide these ingredients into four parts and then split each part in half. I will use these quantities for each layer.
Begin assembling the pie in serving glasses or bowls. For the bottom layer, spread a portion of the crumble. Next, spoon the caramel over it and distribute evenly. Add crushed hazelnuts and banana slices on top. For the next layer, add strawberries and garnish with whipped cream. Finally, grate some dark chocolate and sprinkle it on top.
Afterward, add another layer of crumble, followed by caramel, hazelnut, and banana. To finish, adorn with whipped cream, grate additional dark chocolate on top, and if you have any leftover strawberries, place them on top.
Serve it fresh! Enjoy!
