Moreover, this recipe combines my preferred comfort foods with healthy and nutritious options like borlotti beans, carrots, and pumpkin seeds. However, you can choose your favorite ingredients; there's no need to strictly adhere to the list, just follow the simple method.

To begin with, borlotti beans possess a truly rich texture, offering a comforting flavor and a substantial protein source. When paired with some seeds, they provide a complete protein, meaning all essential amino acids are included.
Secondly, it's incredibly easy to prepare. You just need to peel and slice the ingredients, then sauté them together with minimal effort.
Finally, the way potatoes are prepared can enhance their nutritional value. Thorough washing eliminates all dirt, and keeping the skin intact retains most of the fiber. Additionally, by not discarding any cooking water or oil, all dissolved nutrients, such as potassium, are consumed rather than wasted.

Ingredients, serves 2
1 tbsp olive oil
1 tsp garlic paste
1 large carrot, peeled and thinly sliced
2 medium potatoes, washed and sliced thinly
1 can of borlotti beans, drained and rinsed
1/2 head of small cauliflower, sliced (0.5-1.0 cm)
1 tbsp pumpkin seeds
Salt and pepper to taste
Instructions
Heat up oil and garlic paste. Add sliced carrots and sauté for 1-2 minutes. While you wait prepare rest of the ingredients.
Add potatoes, beans, and cauliflower, along with salt and pepper. Mix thoroughly to ensure even distribution. Cover with a lid and sauté on medium heat for 15-20 minutes. Stir halfway through the cooking process. Finally, verify that everything is fully cooked.
