Easy Greek Salad Recipe

This Easy Greek Salad Recipe makes the perfect accompaniment to almost any meal, especially a Greek feast. For some inspiration, check out my Dolmades or the Smoky Bean Stew Recipe. The salad is easy to make, and it's incredibly fresh and crunchy!

Honestly, vegan feta cheese can be inconsistent, and you'll need to try several brands to discover your favorites. That's exactly what we did, and we found that Bio cheese is the best for us. Naturally, this is just a recommendation, and I assure you I'm not sponsored by them!
So, let's get to it!
Ingredients
3 Lebanese Cucumber, peeled, quartered lengthwise and then sliced
1/2 purple onion, cleaned and chopped
2 large tomatoes, seeds removed and cut to chunks
50 g vegan feta, cubed
1/4 cup of sliced kalamata olive (black)
Small handful of parsley, washed and chopped
2 tbsp extra virgin olive oil (with robust flavor)
1 lemon, juiced
Salt and pepper
Instructions
Prepare ingredients as instructed.
Mix ingredients together.
Add olive oil and lemon juice just before serving!
